Ingredients:
1 large ripe banana
3 eggs
1-2 Tbs ground chia seeds
1-2 tsp cinnamon
Directions:
- Mash banana with a fork.
- Mix in eggs, chia seeds, and seasoning.
- Let the mixture sit for 10 minutes.
- Cook in a skillet over medium heat for ~2 minutes per side. Smaller pancakes are easier to flip and will cook faster.
Notes:
Option to blend all ingredients on low in a blender this will give a smoother consistency. These keep in the fridge and reheat well.
