Ingredients:

2 boneless, skinless chicken breasts
1 Tbs olive oil or avocado oil
2 garlic cloves, minced or pressed
¼ tsp salt
¼ tsp pepper
¼ tsp oregano
¼ tsp dried parsley
¼ tsp dried basil
⅛ tsp onion powder

Directions:

1. Preheat oven to 400°.
2. Pound chicken between wax paper to even thickness and pat dry with paper towel.
3. Mix oil, garlic and seasonings then brush both sides of chicken.  Let marinate for 15 minutes. 
4. Cook each side ~4-5 minutes on oven-safe grill pan over med-high, then transfer to oven for ~6-8 min.
5. Cook until internal temperature reaches 165°. Let rest for a few minutes before serving or cutting.

Notes:

Fresh herbs are great in place of dried seasoning, but it’s difficult to keep them stocked in your fridge regularly without them spoiling before you use them up. Having a pantry stocked with spices you enjoy is so helpful for throwing together last-minute meals that aren’t lacking on flavor.
