½ bell pepper, diced
1 cup spinach, chopped
¾ cup full-fat coconut milk (from can, not carton)

You can roast the potatoes and sauté veggies in advance and keep in fridge till ready to mix in eggs and bake.
Because these do not contain flour, baking soda or baking powder like traditional muffins, they will deflate a little as they cool. They look best when fluffy and right out of the oven but don’t be discouraged as they shrink slightly, they will still be just as delicious!
